Recipes
Peppered Gizzard Recipe (Serves 3)
Ingredients:
- 500g chicken gizzard (cleaned and boiled)
- 1 medium onion bulb (sliced)
- 1 medium green bell pepper (chopped)
- 1 small cabbage (few slices)
- 2 seasoning cubes
- 1 tsp curry powder
- 1 tsp Cameroon pepper (or to taste)
- 1 tsp yaji (suya spice)
- Salt to taste
- 3 tbsp edible soya oil
Instructions:
Boil the gizzard with salt, curry, and seasoning cubes until tender. Heat the soya oil in a pan and sauté onions until translucent.
Add the boiled gizzard and stir-fry for 3–5 minutes. Toss in the green pepper, cabbage, and remaining spices (Cameroon pepper, yaji).
Stir-fry everything together for another 5 minutes until well combined. Serve hot — perfect with rice, plantains, or as a standalone snack.
Nigerian Fried Rice with Soya Oil (Serves 4)
Ingredients:
- 2 cups long-grain parboiled rice
- 1 cup mixed vegetables (carrots, peas, sweet corn)
- 1 cup diced liver or chicken (optional)
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped spring onions
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 tsp curry powder
- 1 tsp thyme
- 2 seasoning cubes
- Salt to taste
- 3–4 tbsp edible soya oil
Instructions:
Parboil the rice: Rinse and boil rice with a pinch of salt until it’s 80% cooked. Drain and set aside.
Prepare protein: If using liver or chicken, season and sauté in 1tbsp soya oil until browned. Set aside. Sauté aromatics: In a large pan or wok, heat the remaining soya oil. Add onions and garlic, stir-fry until fragrant.
Add vegetables: Toss in mixed veggies, bell pepper, and spring onions. Stir-fry for 2–3 minutes.
Season: Add curry, thyme, seasoning cubes, and salt. Mix well.
Combine rice: Add parboiled rice and cooked protein. Stir-fry everything together for 5–7 minutes until rice is well coated and heated through.
Serve hot: Garnish with extra spring onions or sliced boiled eggs if desired
